Ratatouille is a bright and chunky summer vegetable stew, Luxuriously rich, smooth, and flavorful ratatouille recipe. Vegetables are first browned, then cooked in a tomato sauce. This ratatouille dish includes onion, garlic, baby marrow, brinjal, tomatoes, and fresh parsley. The trick to the best ratatouille is to cook all of the vegetables separately, then combine them at the end. That way every vegetable gets exactly the amount of cooking it needs.
Ingredients:
- Baby marrow 250 gm
- Brinjal 250 gm
- Onion (finely sliced) 100 gm
- Tomatoes 250 gm
- Garlic paste 1 tsp
- Oil 2 tbsp
- Salt & Pepper according to taste
- Parsley (chopped) 1 tsp
Method:
- Trim off both ends of the marrow & brinjal.
- Remove the skin & cut into small pieces.
- Cut tomatoes into fine dice.
- Heat oil in a pan & add onions & cook for 5 minutes. Add the vegetable & garlic paste.
- Season with salt & pepper. Cook till the vegetables are tender.
- Add chopped parsley.
