This creamy comfort is not only a great way to use up leftover chicken, it’s also a modern take on a classic. Chicken a la King usually consists of cooked, diced chicken in a cream sauce (or a chicken gravy) that is often served over bread, pasta or noodles. The sauce most often has mushrooms and vegetables. This is a really delicious take on the classic chicken a la king that is foolproof and quick and easy to make.
Ingredients:
- Chicken Boneless (cut into small cubes) 400 gm
- Red Pimento (cut into cubes) 50 gm
- Frozen Peas 50 gm
- Capsicum (cut into cubes) 50 gm
- Mushrooms (sliced) 100 gm
- Chicken Veloute 125 ml
- Cream 30 ml
- Butter 25 gm
- White Pepper 1/2 tsp
- Salt 1/2 tsp
- Onion (chopped) 1
- Garlic paste 1/2 tsp
Method:
- In a frying pan, over medium heat, add the butter.
- Once melted, add the onions, cook until onion is translucent.
- Add garlic paste cook for few seconds.
- Add the chicken & stir fry till tender.
- Add mushrooms & peas.
- Add chicken veloute. Bring to the boil.
- Add pimento & capsicums & season it.
- Finish with cream & correct the seasoning.
- Serve hot over cooked rice, pasta, toast, or biscuits.
